Yields 10 people

Ingredients for the Clementine Cordial (makes 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

For the Drink (produces 850ml, to serve 10)

400ml decent vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine syrup (see above)
A few cranberries, as a garnish
Mandarin essential oil, to finish

Directions

To prepare the Syrup: Place all the components into a saucepan, bring to a gentle boil, agitating to dissolve. After that, turn off the stove and leave to cool down fully. Transfer to a clean bottle, seal keeping it in the refrigerator, where it will keep for about four weeks.

To make Cocktail Base: Mix all the liquid ingredients into one big jug, leave to sit for an hour, then strain best through a fine cloth, to ensure it's completely strained.

To serve: Add 85ml of the premix into your cocktail shaker packed with ice, and stir lightly for a minute until cold. Pour into a chilled martini glass or similar, garnish with a few cranberries adding the final touch by giving it a brief mist of the essential oil above the glass.
